Toast with Cottage Cheese & Jam

Need extra focus power in the morning? Is it Test Day, Presentation Day, or something else? Try this.

Toast 2 pieces of Whole Wheat Bread or Whole Grain Bread (If Need Gluten Free – Then choose your favorite bread.)
Spread 1 tablespoon of coconut oil on toast.
Top with low fat cottage cheese.
Add your favorite jam.
May want to top with granola or chopped nuts.

Enjoy this with your favorite fruit juice. This will keep you awake, alert and focused for the tasks of the day. My kids looked forward to eating this on test days, and they felt it helped them do better on their exams.

Whole Wheat Waffles

2 eggs
2 c. milk
1 1/2 c. whole wheat flour
1 c. bran or wheat germ
1/4 c. oil
2 tsp. baking powder
1 Tbsp. honey
1/2 tsp. salt
1 1/2 Tbsp. Almond Extract

Blend together in blender, and cook on waffle iron. Makes 4-6 depending on size of waffle iron.

These are deliciously tasty and very healthy. They are great for those “test” or “stress” days.
