Lunch Delites Recipes

Tuna Melts

My kids detested tuna sandwiches growing up until I came up with tuna melts.

1 can tuna
1/3 to 1/2 cup mayonnaise or salad dressing
1/4 tsp. cayenne pepper
1/8 tsp. cumin
1/4 tsp. dried parsley flakes
Any other seasonings you desire
Pepper Jack Cheese (or your favorite)
Bread

Mix up the tuna, mayonnaise and seasonings. Spoon on top of bread. Top with cheese. Broil on High until cheese has melted. A great accompaniment to your favorite bowl of soup.
